How it works
At elevation, thinner air changes three things at once: leavening gases expand more (so cakes over-rise and collapse), water boils cooler, and moisture evaporates faster (so bakes dry out and sugar concentrates). Why do cakes sink at high altitude?
Lower air pressure lets the batter rise faster than its structure can set, so it inflates, overstretches and collapses. Less leavening, a hotter oven (to set the structure sooner) and slightly less sugar all push back.
Why raise the temperature but shorten the time?
The hotter oven sets the crumb before the exaggerated rise gets out of hand — and because moisture evaporates faster up high, the shorter time keeps the bake from drying out.
Does altitude affect bread and cookies too?
Yes. Yeast doughs rise noticeably faster — use slightly less yeast or punch down twice. For cookies, a small liquid increase and a little less sugar and leavening stops the spread.
