- 8 oz rice noodles

- 1 cup sliced cooked chicken or tofu

- 2 tablespoons sesame oil
- 1 tablespoon sriracha (optional)
Instructions
- 1. Cook the rice noodles according to package instructions, then drain and rinse under cold water to stop the cooking process.
- 2. In a large skillet, heat the sesame oil over medium heat and add the mixed vegetables. Sauté for about 5-7 minutes until they are tender.
- 3. Add the sliced chicken or tofu to the skillet and stir-fry for an additional 3-4 minutes until heated through.
