Indian-Style Tomato & Potato Masala Rice

Ingredients
- 1.5 cups Basmati rice
- 2 medium (about 12 oz total) Potatoes
- 1 large Onion
- 4 cloves Garlic
- 4 medium (about 1 lb total) Tomatoes
- 3 tablespoons Vegetable oil
- 1 teaspoon Ground cumin
- 1.5 teaspoons Ground coriander
- 0.5 teaspoon Turmeric powder
- 1 teaspoon Garam masala
- 0.5 teaspoon Red chili powder
- 1.25 teaspoons Salt
- 0.25 teaspoon Black pepper
- 3 cups Water
- 0.25 cup, chopped Fresh cilantro (optional)
Instructions
- 1. Rinse the basmati rice in cold water until water runs clear. Soak for 10 minutes, then drain.
- 2. Peel and dice potatoes into 1/2-inch cubes. Finely chop onion, garlic, and tomatoes.
- 3. Heat oil in a large pot or deep skillet over medium heat. Add onion and sauté until golden, about 5 minutes.
- 4. Add garlic and cook for 1 minute. Stir in cumin, coriander, turmeric, garam masala, and chili powder. Cook until fragrant, 1 minute.
- 5. Add diced potatoes and cook, stirring, for 3 minutes. Add chopped tomatoes, salt, and pepper. Cook until tomatoes soften, about 4 minutes.
- 6. Add drained rice. Stir gently to coat grains with spices and vegetables.
- 7. Pour in water. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, or until rice is tender and liquid is absorbed.
- 8. Turn off heat. Let rest, covered, for 5 minutes. Fluff rice and garnish with cilantro if using. Serve warm.
