Ingredients
- 1 cup strong brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 24 pieces ladyfingers
Instructions
- 1. In a mixing bowl, combine the mascarpone cheese, heavy cream, granulated sugar, and vanilla extract. Whip with an electric mixer on medium speed until the mixture is smooth and creamy.
- 2. In a shallow dish, mix the cooled brewed coffee and coffee liqueur (if using). Dip each ladyfinger quickly into the coffee mixture, ensuring they are soaked but not soggy.
- 3. Layer half of the soaked ladyfingers in the bottom of a 9x9 inch baking dish.
- 4. Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out evenly.
- 5. Repeat the process with the remaining ladyfingers and mascarpone mixture. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
