Hibiscus Ginger Mocktail

Ingredients
- 2 cups dried hibiscus flowers
- 1 inch fresh ginger, peeled and sliced
- 4 cups water
- 1/4 cup honey or agave syrup
- 1 lime, juiced fresh lime juice
- 1 cup sparkling water
Instructions
- 1. In a medium saucepan, bring 4 cups of water to a boil.
- 2. Once boiling, add 2 cups of dried hibiscus flowers and the sliced ginger. Reduce heat and let simmer for about 10 minutes.
- 3. Remove from heat and strain the mixture into a pitcher, discarding the solids. Stir in 1/4 cup of honey or agave syrup while the tea is still warm.
- 4. Let the hibiscus tea cool to room temperature, then refrigerate until chilled, about 30 minutes.
- 5. To serve, fill glasses with ice, add 1/2 cup of the chilled hibiscus tea, 1 tablespoon of fresh lime juice, and top with sparkling water. Garnish with lime slices and a sprig of mint if desired.
