- 6 large eggs
- 1 cup fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 cup feta cheese, crumbled
- 1 small red onion, diced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano

Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. In a large mixing bowl, whisk together the eggs, oregano, salt, and pepper until well combined.
- 3. In an oven-safe skillet, heat the olive oil over medium heat and sauté the diced red onion until translucent, about 3-4 minutes.
- 4. Add the chopped spinach and halved cherry tomatoes to the skillet, cooking for another 2-3 minutes until the spinach wilts.
- 5. Pour the egg mixture over the sautéed vegetables and sprinkle the crumbled feta cheese on top. Cook for about 5 minutes on the stovetop until the edges start to set, then transfer the skillet to the preheated oven.
- 6. Bake in the oven for 10-15 minutes, or until the frittata is set and slightly golden on top. Let it cool for a few minutes before slicing and serving.
