Spiced Creamy Chicken Thighs with Potato-Onion Mash

Ingredients
- 4 pieces chicken thighs (bone-in, skin-on)
- 2 medium onion
- 800 grams potatoes
- 120 ml heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 teaspoon smoked paprika
- 0.5 teaspoon ground cumin
- 0.5 teaspoon chili flakes
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons fresh parsley (optional)
Instructions
- 1. Peel and chop potatoes into chunks. Peel and finely slice onions. Mince garlic.
- 2. Boil potatoes in salted water until tender (about 15 minutes). Drain and reserve.
- 3. While potatoes cook, heat 1 tbsp olive oil in a large skillet over medium-high. Season chicken with salt, pepper, paprika, cumin, and chili flakes.
- 4. Sear chicken thighs skin-side down until golden (5 minutes). Flip and cook 3 more minutes. Remove and set aside.
- 5. Add remaining oil and onions to the pan. Sauté until soft and golden (5 minutes). Add garlic, cook 1 minute.
- 6. Return chicken to pan. Add 80 ml cream, cover, and simmer on low until chicken is cooked through (10 minutes).
- 7. Mash drained potatoes with remaining cream, sautéed onions, salt, and pepper. Adjust seasoning.
- 8. Serve chicken and sauce over potato-onion mash. Garnish with parsley if using.
