- 14 ounces extra-firm tofu, pressed and cubed
- 2 cups broccoli florets
- 1 red bell pepper sliced
- 1 zucchini sliced
- 3 tablespoons soy sauce or tamari
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
- 1 teaspoon salt
Instructions
- 1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- 2. In a large bowl, combine the cubed tofu, broccoli, bell pepper, and zucchini.
- 3. In a small bowl, mix together the soy sauce, olive oil, garlic powder, smoked paprika, black pepper, and salt.
- 4. Pour the sauce over the tofu and vegetables, tossing everything to coat evenly.
- 5. Spread the tofu and vegetable mixture in a single layer on the prepared baking sheet and bake for 20 minutes, flipping halfway through, until the tofu is golden brown and the vegetables are tender.
