- 1 pound fresh salmon fillet, skin removed
- 1 cup almond flour
- 2 large eggs
- 1 cup chopped green onions
- 2 cloves garlic, minced
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup mayonnaise (paleo-friendly)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Instructions
- 1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- 2. In a large bowl, flake the salmon into small pieces and add the almond flour, eggs, chopped green onions, minced garlic, sea salt, and black pepper. Mix until well combined.
- 3. Form the mixture into patties, about 2-3 inches in diameter, and place them on the prepared baking sheet.
- 4. Drizzle the olive oil over the patties and bake in the preheated oven for 15-20 minutes, or until the patties are golden brown and cooked through.
- 5. While the patties are baking, prepare the lemon aioli by mixing the mayonnaise, lemon juice, and lemon zest in a small bowl until smooth. Serve the salmon patties warm with the aioli on the side.
