Cuisine: American
Cooking time: 30 minutes
Serves: 4
Ingredients
- 1 pound chicken breast, diced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- 1. In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, garlic powder, onion powder, paprika, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- 2. Add the rice to the skillet and stir to combine with the chicken and spices.
- 3. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes, or until the rice is cooked and has absorbed the broth.
- 4. Remove the skillet from heat and sprinkle the shredded cheddar cheese evenly over the top. Cover again for a few minutes until the cheese is melted.
- 5. Divide the cheesy chicken and rice into meal prep containers. Let cool before sealing and refrigerating. This dish can be stored in the fridge for 4-5 days.
