Ingredients
- 4 ounces beef (thinly sliced, such as sirloin or ribeye)
- 1 cup cooked white rice
- 1 large egg
- 1/4 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon soy sauce
- 1 tablespoon mirin (or substitute: 1 tsp sugar + 1 tsp water)
- 1 teaspoon sriracha or Japanese chili oil
- 2 tablespoons onion (thinly sliced)
- 1 teaspoon neutral oil (canola or vegetable)

- to taste black pepper
Instructions
- 1. Heat oil in a skillet over medium-high. Sauté onion for 1 minute until softened.
- 2. Add beef, season lightly with salt and pepper. Stir-fry until just browned, about 2 minutes.
- 3. Stir in soy sauce, mirin, and sriracha. Cook 1 minute more until beef is glazed and sauce thickens slightly.
- 4. Push beef aside. Crack egg into pan and scramble gently, or fry to your liking (about 2 minutes).
- 5. Warm rice in a bowl. Top with beef, onions, and egg. Sprinkle cheese over hot ingredients to melt.
