- 1 head cauliflower
- 1 pound shrimp, peeled and deveined

- 1 cup bell pepper, diced
- 1 cup zucchini, diced
- 2 cloves garlic, minced

- 1. Begin by removing the leaves and stem from the cauliflower, then cut it into florets.
- 2. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
- 3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- 4. Add the shrimp to the skillet, cooking for 2-3 minutes on each side until they turn pink and opaque. Remove shrimp from the skillet and set aside.
