Ingredients
- 4 cups cooked pumpkin puree
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 cups vegetable broth
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cayenne pepper
- 1 cup coconut milk
- salt to taste salt

Instructions
- 1. Heat the olive oil in a large pot over medium heat.
- 2. Add the chopped onion and sauté until translucent, about 5 minutes.
- 3. Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
- 4. Add the pumpkin puree, vegetable broth, cinnamon, nutmeg, and cayenne pepper to the pot. Bring to a simmer.
- 5. Once simmering, stir in the coconut milk and season with salt and black pepper to taste. Cook for another 5 minutes, then blend until smooth using an immersion blender.
