- 2 tablespoons gochujang sauce
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon sesame seeds
Instructions
- 1. Start by cooking the short-grain rice according to package instructions. Once cooked, set it aside and keep it warm.
- 2. In a large skillet, heat the sesame oil over medium heat. Add the julienned carrots and zucchini, sautéing for about 3-4 minutes until they begin to soften.
- 3. Next, add the sliced shiitake mushrooms and sauté for an additional 3-4 minutes until all vegetables are tender. Stir in the blanched spinach and drizzle with soy sauce, cooking for 1 more minute.
- 4. In a separate pan, fry the eggs sunny-side up or to your preference. Season lightly with salt.
- 5. To assemble the bibimbap, divide the warm rice into bowls, top with the sautéed vegetables, a fried egg, and a drizzle of gochujang sauce. Sprinkle with sesame seeds before serving.
