Chicken and Spinach Coconut Curry

Ingredients
- 500 grams chicken breast
- 1 medium onion
- 3 cloves garlic
- 120 grams fresh spinach
- 1 cup frozen peas
- 400 ml coconut milk
- 1 tablespoon vegetable oil
- 1 tablespoon mild curry powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 250 ml chicken broth
- 2 cups cooked white rice
Instructions
- 1. Dice the onion and mince the garlic. Cut the chicken breast into bite-sized cubes.
- 2. Heat oil in a large pot over medium heat. Add onion and cook until translucent.
- 3. Add garlic and curry powder. Stir for 1 minute until fragrant.
- 4. Add chicken pieces, season with salt and pepper, and cook until lightly browned.
- 5. Pour in coconut milk and chicken broth. Bring to a simmer.
- 6. Add peas and simmer for 5 minutes.
- 7. Stir in spinach and cook until wilted.
- 8. Serve hot over cooked white rice.
