Moong Dal Chilla with Mint Yogurt

Ingredients
- 1 cup split yellow moong dal
- 2 cups water
- 1 inch piece fresh ginger
- 1 medium green chili
- 0.25 cup cilantro
- 0.5 cup red onion
- 0.25 cup carrot
- 1 teaspoon cumin seeds
- 0.5 teaspoon turmeric powder
- 1 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoons oil
- 1 cup plain Greek yogurt
- 0.25 cup fresh mint leaves
- 1 tablespoon lemon juice
- 0.25 teaspoon ground cumin
- 0.5 teaspoon sugar
Instructions
- 1. Rinse and soak moong dal in water for 3 hours. Drain.
- 2. Blend dal with ginger, green chili, and 1/2 cup water to a smooth batter.
- 3. Transfer to a bowl. Mix in cilantro, onion, carrot, cumin seeds, turmeric, salt, and pepper.
- 4. Heat a nonstick skillet over medium. Grease lightly with oil.
- 5. Pour 1/4 cup batter, spread into a thin pancake. Cook 2-3 minutes per side until golden. Repeat.
- 6. For mint yogurt: blend yogurt, mint, lemon juice, ground cumin, sugar, and a pinch of salt until smooth.
- 7. Serve chillas hot with mint yogurt on the side.
