Cuisine: American
Cooking time: 35 minutes
Serves: 4
Ingredients
- 1 pound ground turkey
- 2 medium sweet potatoes, diced
- 1 cup bell pepper, chopped
- 1 cup broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. In a large bowl, combine the diced sweet potatoes, bell pepper, and broccoli florets. Drizzle with 1 tablespoon of olive oil, and season with garlic powder, paprika, salt, and pepper. Toss until the vegetables are well coated.
- 3. Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and slightly caramelized.
- 4. While the vegetables are baking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the ground turkey and cook until browned and fully cooked, about 7-10 minutes. Break it apart with a spatula as it cooks.
- 5. Once the turkey is cooked, remove the vegetables from the oven and combine them with the turkey in the skillet. Stir to mix everything together, then remove from heat and allow to cool slightly before portioning into meal prep containers.
