Falafel Wrap with Hummus

Ingredients
- 1 cup dried chickpeas
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 2 teaspoons cumin
- 4 large whole wheat tortillas
- 1 cup hummus
- 1 cup mixed salad greens
- 1 medium tomato, sliced
- 1 medium cucumber, sliced
Instructions
- 1. Soak the dried chickpeas in water overnight to soften them.
- 2. Drain and rinse the soaked chickpeas, then blend them in a food processor with onion, garlic, parsley, cumin, and a pinch of salt until a coarse mixture forms.
- 3. Form the chickpea mixture into small balls or patties and heat oil in a frying pan over medium heat.
- 4. Fry the falafel for about 3-4 minutes on each side until golden brown and crispy.
- 5. Spread hummus on each tortilla, place the fried falafel on top, and add salad greens, tomato, and cucumber before wrapping it up.
