- 2 cups chopped broccoli
- 1 cup chopped bell peppers
- 1 cup chopped sweet potatoes
- 1 can chickpeas, drained and rinsed
- 1 cup hummus
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- 1. Preheat your oven to 425°F (220°C).
- 2. In a large mixing bowl, combine chopped broccoli, bell peppers, sweet potatoes, chickpeas, olive oil, garlic powder, paprika, salt, and black pepper. Toss until everything is well coated.
- 3. Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
- 4. Roast the vegetables in the preheated oven for 20 minutes, stirring halfway through, until they are tender and slightly caramelized.
