- 8 large eggs
- 1 cup bell peppers, diced

- 1 cup black beans, drained and rinsed
- 4 large whole wheat tortillas
Instructions
- 1. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell peppers and sauté for about 5 minutes until they are soft.
- 2. Add the chopped spinach and black beans to the skillet, stirring well to combine. Cook for an additional 2-3 minutes until the spinach is wilted.
- 3. In a separate bowl, whisk the eggs together with salt and pepper to taste. Pour the eggs into the skillet with the vegetables and scramble until fully cooked.
- 4. Once the egg mixture is cooked, remove it from the heat and let it cool slightly. Meanwhile, lay out the whole wheat tortillas on a clean surface.
