Chicken Masala
A flavorful, medium-spiced Indian chicken curry simmered in a rich, aromatic tomato-onion masala sauce.

Ingredients
- 600 grams boneless chicken thighs
- 100 grams plain yogurt
- 1 tablespoon lemon juice
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 0.5 teaspoon turmeric powder
- 0.25 teaspoon cayenne pepper
- 1.5 teaspoons salt
- 2 tablespoons vegetable oil
- 1 large onion
- 4 pieces garlic cloves
- 1 inch fresh ginger
- 3 medium tomatoes
- 1 small green chili
- 3 tablespoons fresh cilantro
Instructions
- 1. Cut chicken into bite-sized pieces. In a bowl, combine yogurt, lemon juice, 1 tsp garam masala, 0.5 tsp salt, and half the turmeric. Add chicken, mix well, and marinate for 20 minutes.
- 2. Finely chop onion, garlic, ginger, and green chili. Dice tomatoes.
- 3. Heat oil in a large pan over medium heat. Add onions; sauté until golden brown, about 5 minutes.
- 4. Add garlic, ginger, and green chili. Cook for 1 minute until fragrant.
- 5. Add remaining garam masala, cumin, coriander, turmeric, cayenne, and 1 tsp salt. Stir for 1 minute.
- 6. Add tomatoes. Cook for 5 minutes, stirring, until tomatoes break down and oil separates.
- 7. Add marinated chicken with marinade. Cook for 8–10 minutes, stirring occasionally, until chicken is cooked through and sauce thickens.
- 8. Taste and adjust salt or spice if needed. Garnish with chopped cilantro. Serve hot with rice or naan.
