Spiced Poha & Chickpea Hash
A vibrant, protein-rich vegetarian hash starring poha, chickpeas, potato, and colorful veggies, gently spiced for a satisfying meal.

Ingredients
- 2 cups Poha (flattened rice)
- 1.5 cups Chickpeas (cooked, drained)
- 2 pieces Potato (medium, peeled and diced)
- 1 cup Capsicum (bell pepper, diced)
- 1 cup Tomato (medium, chopped)
- 1 cup Onion (medium, chopped)
- 2 cloves Garlic (minced)
- 0.25 cup Chana sattu (roasted gram flour)
- 0.5 cup Adhar dal (split yellow lentils, cooked)
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 0.5 teaspoon Ground cumin
- 0.5 teaspoon Ground coriander
- 0.25 teaspoon Red chili powder
- 0.25 teaspoon Turmeric powder
- 2 tablespoons Cooking oil
- 1 tablespoon Lemon juice
- 2 tablespoons Fresh cilantro (optional, chopped)
Instructions
- 1. Rinse poha in a strainer under cold water for 30 seconds. Drain well and set aside.
- 2. Heat oil in a large skillet over medium heat. Add diced potatoes; cook, stirring occasionally, until golden and just tender, about 8 minutes.
- 3. Add onions and garlic. Sauté until onions are translucent, about 3 minutes.
- 4. Stir in capsicum and tomatoes. Cook until softened, about 4 minutes.
- 5. Add chickpeas and cooked adhar dal. Sprinkle in cumin, coriander, turmeric, chili powder, salt, and pepper. Cook for 2 minutes, stirring.
- 6. Add poha and chana sattu. Mix well and cook for 3 minutes, letting poha absorb flavors.
- 7. Turn off heat. Stir in lemon juice and cilantro. Taste and adjust seasoning if needed. Serve warm.
