Ingredients
- 1 pound flank steak
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup red onion, thinly sliced
- 1 cup fresh parsley, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- 1. In a bowl, whisk together olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and black pepper to create the chimichurri sauce.
- 2. Place the flank steak in a resealable plastic bag or shallow dish and pour half of the chimichurri sauce over it. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
- 3. Preheat a grill or skillet over medium-high heat. Cook the marinated flank steak for about 6-8 minutes on each side for medium-rare, or until cooked to your desired doneness.
- 4. Remove the steak from the heat and let it rest for 10 minutes before slicing it thinly against the grain.
- 5. In meal prep containers, divide the mixed salad greens, cherry tomatoes, cucumber, and red onion evenly. Top each with sliced steak and drizzle the remaining chimichurri sauce over the salads. Seal the containers and store them in the refrigerator.
