- 4 large bell peppers (any color)
- 1 pound ground turkey
- 1 cup cauliflower rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- 3. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
- 4. Add ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, then stir in cauliflower rice, Italian seasoning, salt, and black pepper. Cook for an additional 5 minutes.
- 5. Stuff each bell pepper with the turkey mixture, pressing down gently to pack it in. Bake in the preheated oven for about 20 minutes or until the peppers are tender. Garnish with fresh parsley before serving.
