Spicy Garlic Stir-Fried Rice (Vegetarian)

Ingredients
- 10 large, minced garlic cloves
- 3 cups cooked jasmine rice
- 1.5 cups, diced mixed bell peppers
- 1 large, diced carrot
- 0.75 cup frozen peas
- 2 large eggs
- 3 tablespoons soy sauce (low sodium)
- 1.5 tablespoons sesame oil
- 1.5 tablespoons canola oil
- 1 teaspoon red chili flakes
- 0.5 cup, chopped scallions
- 0.25 teaspoon black pepper
Instructions
- 1. Prepare all vegetables and mince garlic. Beat eggs in a small bowl.
- 2. Heat canola oil in a large skillet or wok over medium-high heat. Add eggs, scramble, then set aside.
- 3. Add sesame oil to the pan. Sauté garlic and chili flakes for 1 minute until fragrant.
- 4. Add bell peppers, carrots, and peas. Stir-fry for 4 minutes until just tender.
- 5. Add rice, soy sauce, and black pepper. Stir-fry for 5 minutes, breaking up clumps.
- 6. Return eggs to pan. Mix well, cook for 2 minutes. Garnish with scallions.
