- 1 large head of cauliflower, cut into florets
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 cup Greek yogurt
- 2 tablespoons chipotle in adobo sauce
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1/4 cup fresh cilantro, chopped
- 1 lime juiced
Instructions
- 1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- 2. In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, salt, and pepper until evenly coated.
- 3. Spread the seasoned cauliflower on the prepared baking sheet and roast in the oven for about 20 minutes, or until golden and tender, stirring halfway through.
- 4. Meanwhile, in a small bowl, mix together the Greek yogurt, chipotle in adobo sauce, and lime juice to create the chipotle sauce.
- 5. Once the cauliflower is roasted, warm the corn tortillas in a dry skillet over medium heat. Assemble the tacos by placing roasted cauliflower on each tortilla, topping with shredded cabbage, a drizzle of chipotle sauce, and a sprinkle of chopped cilantro.
