Thai Spicy Chicken & Vegetable Stir-Fry with Jasmine Rice

Ingredients
- 1.25 pounds chicken breast
- 1.5 cups jasmine rice
- 4 cups mixed vegetables (bell pepper, broccoli, carrot)
- 3 cloves garlic
- 1 tablespoon fresh ginger
- 4 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons brown sugar
- 1 tablespoon lime juice
- 2 teaspoons sriracha
- 2 tablespoons vegetable oil
- 2 stalks green onions
- 0.25 cup cilantro (optional)
Instructions
- 1. Rinse rice. Add to pot with 3 cups water. Bring to boil, cover, reduce heat, and simmer 15 minutes. Fluff and keep warm.
- 2. Slice chicken into thin strips. Mince garlic and ginger. Chop vegetables into bite-size pieces.
- 3. In a small bowl, mix soy sauce, fish sauce, brown sugar, lime juice, and sriracha.
- 4. Heat 1 tablespoon oil in large skillet over medium-high. Add chicken. Stir-fry until just cooked, about 4 minutes. Remove to plate.
- 5. Add remaining oil to skillet. Stir-fry garlic, ginger, and vegetables until crisp-tender, about 4 minutes.
- 6. Return chicken to skillet. Pour in sauce. Toss and cook 2 minutes until everything is coated and hot.
- 7. Serve stir-fry over rice. Garnish with green onions and cilantro if desired.
