Vegetarian Tawa Pulao with Masala Vegetables

Ingredients
- 1.5 cups Basmati rice
- 1 large, diced Onion
- 4 cloves, minced Garlic
- 2 medium, chopped Tomatoes
- 2 medium, diced Potatoes
- 8 ounces, sliced Mushrooms
- 2 medium, diced Bell peppers
- 3 tablespoons Vegetable oil
- 1 teaspoon Cumin seeds
- 0.5 teaspoon Turmeric powder
- 1 teaspoon Coriander powder
- 1 teaspoon Garam masala
- 0.5 teaspoon Red chili powder
- 1.5 teaspoons (or to taste) Salt
- 0.25 cup, chopped Fresh cilantro
Instructions
- 1. Rinse rice until water runs clear. Cook with 3 cups water. Fluff and set aside.
- 2. Heat oil in a large skillet over medium. Add cumin seeds and let sizzle 30 seconds.
- 3. Add onions; sauté 3 minutes until translucent. Stir in garlic, cook 1 minute.
- 4. Add potatoes. Sauté 5 minutes. Add mushrooms and bell peppers; cook 4 more minutes.
- 5. Stir in tomatoes, turmeric, coriander, garam masala, chili powder, and salt. Cook until tomatoes soften, about 4 minutes.
- 6. Add cooked rice to skillet. Mix gently to coat rice with masala. Cook 2 minutes.
- 7. Turn off heat. Garnish with fresh cilantro. Serve hot.
