Ingredients
- 1 cup fresh blueberries
- 2 tablespoons dried culinary lavender
- 2 cups water
- 1 tablespoon honey or agave syrup
- 1 cup sparkling water
- 1 tablespoon fresh lemon juice
Instructions
- 1. In a small saucepan, combine the fresh blueberries, dried lavender, and water. Bring to a boil over medium heat.
- 2. Once boiling, reduce the heat and let it simmer for about 10 minutes, mashing the blueberries with a fork to release their juices.
- 3. Remove from heat and strain the mixture through a fine mesh sieve to separate the liquid from the solids. Press down on the solids to extract as much liquid as possible.
- 4. Stir in the honey or agave syrup while the liquid is still warm, then let it cool to room temperature.
- 5. In a glass filled with ice, combine 1/4 cup of the blueberry-lavender syrup, the fresh lemon juice, and top with sparkling water. Stir gently to combine, and garnish with a few fresh blueberries and a sprig of lavender.
