Turkey Meatball and Vegetable Soup High Protein

Ingredients
- 1 pound ground turkey
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup zucchini, diced
- 4 cups low-sodium chicken broth
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- 1 cup spinach, chopped
Instructions
- 1. In a large bowl, combine ground turkey, Italian seasoning, salt, and pepper. Mix well and form into small meatballs, about 1 inch in diameter.
- 2. Heat olive oil in a large pot over medium heat. Add the meatballs in batches and brown them on all sides, about 5-7 minutes. Remove and set aside.
- 3. In the same pot, add diced carrots, celery, and zucchini. Sauté for about 5 minutes until they start to soften.
- 4. Pour in the chicken broth and bring to a boil. Once boiling, reduce heat to a simmer and return the meatballs to the pot.
- 5. Add chopped spinach and cook for an additional 5 minutes until the spinach is wilted and the meatballs are cooked through. Adjust seasoning if necessary before serving.
