- 1 can canned black beans, drained and rinsed

- 4 large flour tortillas
- 1 cup frozen corn
- 1 teaspoon cumin
- 1 tablespoon olive oil
Instructions
- 1. In a medium bowl, combine the drained black beans, frozen corn, and cumin. Mix well.
- 2. Heat a large skillet over medium heat and add the olive oil.
- 3. Place one tortilla in the skillet and sprinkle half of it with a layer of shredded cheese.
- 4. Spread half of the bean and corn mixture over the cheese, then fold the tortilla in half.
- 5. Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
