Cuisine: Mediterranean
Cooking time: 30 minutes
Serves: 4
Ingredients
- 1 pound boneless, skinless chicken breast
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 teaspoons oregano
- 1 teaspoon garlic powder
- 1 cup Greek yogurt
- 1 small cucumber
- 1 clove garlic
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- 1. In a bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper to create the marinade.
- 2. Cut the chicken breasts into 1-inch cubes and add them to the marinade, mixing well to coat. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator.
- 3. While the chicken marinates, prepare the tzatziki sauce by grating the cucumber and squeezing out excess moisture. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, salt, and pepper.
- 4. Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers and grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- 5. Once cooked, let the chicken souvlaki cool slightly before transferring it to meal prep containers. Serve with tzatziki sauce on the side and store in the fridge for up to 5 days.
