Spiced Potato & Tomato Sabzi

Ingredients
- 600 grams potato
- 2 medium onion
- 4 cloves garlic
- 3 medium tomato
- 2 whole green chili
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 0.5 teaspoon turmeric powder
- 0.25 teaspoon black pepper
Instructions
- 1. Peel and dice potatoes into 1-inch cubes. Finely chop onion, garlic, and green chilies. Dice tomatoes.
- 2. Heat oil in a large skillet on medium. Add onions and sauté until golden, about 5 minutes.
- 3. Add garlic and green chili. Cook, stirring, for 1 minute until fragrant.
- 4. Add cumin, coriander, turmeric, and black pepper. Stir for 30 seconds to bloom spices.
- 5. Stir in potatoes and salt. Cook for 2 minutes, stirring to coat with spices.
- 6. Add tomatoes and 1/2 cup water. Cover and simmer on low, stirring occasionally, until potatoes are tender, about 12 minutes.
- 7. Uncover and cook 2–3 minutes more to thicken sauce. Taste and adjust salt or chili as needed.
