Spicy Japanese Tamago Donburi (Egg Rice Bowl)
A quick, comforting Japanese rice bowl topped with fluffy eggs and a medium-spicy soy-chili sauce.

Ingredients
- 2 large eggs
- 1 cup cooked white rice
- 1 tablespoon soy sauce
- 1 teaspoon mirin (or dry sherry)
- 1/2 teaspoon sugar
- 1 teaspoon sriracha or Japanese chili oil
- 1 tablespoon (sliced) green onion
- 1 teaspoon neutral oil (canola or vegetable)
Instructions
- 1. Whisk eggs with a pinch of salt until well combined.
- 2. Heat oil in a nonstick skillet over medium heat. Pour in eggs and gently scramble until just set but still soft. Remove from heat.
- 3. In a small bowl, mix soy sauce, mirin, sugar, and sriracha or chili oil.
- 4. Warm cooked rice in a serving bowl. Top with scrambled eggs.
- 5. Drizzle sauce over eggs and rice. Garnish with sliced green onion. Serve immediately.
