- 4 large bell peppers
- 1 cup quinoa
- 1 pound lean ground turkey
- 1 cup black beans, rinsed and drained
- 1 cup diced tomatoes
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup shredded cheese (optional)
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed.
- 3. While quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a spatula, about 5-7 minutes.
- 4. Stir in the black beans, diced tomatoes, cumin, paprika, salt, and pepper into the cooked turkey. Cook for an additional 3-5 minutes until heated through.
- 5. Once quinoa is cooked, fluff it with a fork and mix it into the turkey mixture. Cut the tops off the bell peppers and remove the seeds. Stuff each pepper with the turkey and quinoa mixture, then place them upright in a baking dish. If desired, top with shredded cheese.
- 6. Bake in the preheated oven for 20 minutes, or until the peppers are tender and the cheese is melted and bubbly.
