Vegan Garlic Chick'n Skillet with Herbed Rice

Ingredients
- 1.5 pounds vegan garlic chick'n (store-bought or homemade, such as seitan or soy-based)
- 1.5 cups long grain white rice
- 3 cups vegetable broth (low sodium)
- 2 medium carrot
- 1 cup frozen peas
- 0.25 cup fresh parsley
- 2 tablespoons olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- 1. Dice carrot and chop parsley. Slice or cube vegan garlic chick'n if not pre-cut.
- 2. Heat olive oil in a large skillet over medium heat. Add carrots and sauté for 3 minutes.
- 3. Stir in rice and cook for 2 minutes, stirring to coat with oil.
- 4. Add vegetable broth, salt, and pepper. Bring to a boil, then reduce heat to low.
- 5. Cover and simmer for 10 minutes. Add peas and vegan chick'n on top. Do not stir.
- 6. Continue to simmer, covered, for 8 more minutes until rice is tender and liquid absorbed.
- 7. Remove from heat. Let sit, covered, for 5 minutes. Fluff rice, stir in parsley, and serve.
