- 1 cup rice noodles
- 1 cup bean sprouts
- 1 cup fresh basil leaves
- 2 medium green onions, sliced
- 2 large eggs, soft-boiled
Instructions
- 1. In a large pot, combine the vegetable broth, halved onion, smashed garlic, sliced ginger, and star anise. Bring the mixture to a boil.
- 2. Once boiling, reduce the heat and let the broth simmer for about 15 minutes to allow the flavors to meld.
- 3. After simmering, strain the broth to remove the solids, returning the liquid to the pot. Stir in the soy sauce.
