Vegetarian Ramen with Soft Boiled Egg

- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 2 packs ramen noodles
- 1 cup baby spinach
- 2 large eggs
Instructions
- 1. In a large pot, heat the vegetable broth over medium heat until it begins to simmer.
- 2. Add the miso paste and soy sauce to the broth, stirring until fully dissolved.
- 3. While the broth is simmering, bring another pot of water to a boil for the eggs. Carefully add the eggs and boil for 6-7 minutes for a soft yolk.
- 4. Add the ramen noodles to the simmering broth and cook according to package instructions, usually about 3-4 minutes.
- 5. Once the noodles are cooked, add the baby spinach to the pot and stir until wilted. Remove from heat and serve in bowls topped with the soft boiled eggs, cut in half.
