- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 large red bell pepper, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 4 large eggs
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 cup fresh parsley, chopped
Instructions
- 1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- 2. Stir in the red bell pepper and garlic, cooking for another 3-4 minutes until the bell pepper softens.
- 3. Add the diced tomatoes, cumin, paprika, and cayenne pepper. Season with salt and pepper, then let the mixture simmer for about 10 minutes until it thickens.
- 4. Make four small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes until the eggs are set to your liking.
- 5. Remove from heat, sprinkle with fresh parsley, and serve hot with crusty bread or pita.
