Aaloo Pyaaz Hari Mirch Bhaji

Ingredients
- 600 grams Aaloo (Potatoes)
- 250 grams Pyaaz (Onions)
- 3 medium Hari Mirch (Green Chilies)
- 1.5 teaspoons Namak (Salt)
- 2 tablespoons Vegetable Oil
- 1 teaspoon Cumin Seeds (optional)
- 0.5 teaspoon Turmeric Powder (optional)
Instructions
- 1. Peel and cut potatoes into 1-inch cubes. Slice onions thinly and chop green chilies.
- 2. Heat oil in a large pan on medium heat. Add cumin seeds (if using) and let them splutter.
- 3. Add sliced onions and sauté until soft and golden, about 5 minutes.
- 4. Add green chilies and sauté for 1 minute. Stir in turmeric powder (if using).
- 5. Add potato cubes and salt. Mix well to coat evenly.
- 6. Cover and cook on low-medium heat, stirring occasionally, until potatoes are tender (about 12-15 minutes).
- 7. Uncover and increase heat to medium-high. Sauté for 3-4 minutes for crisp edges.
