- 1 cup sunflower butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup fruit jam (your choice)
Instructions
- 1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- 2. In a large mixing bowl, combine the sunflower butter, granulated sugar, and brown sugar. Mix until smooth and creamy.
- 3. Add the egg and vanilla extract to the mixture, and stir until fully incorporated.
- 4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a dough forms.
- 5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart. Press each ball down slightly and use your thumb to create a small indent in the center of each cookie.
- 6. Bake the cookies in the preheated oven for 10-12 minutes, until the edges are lightly golden. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack.
- 7. Once the cookies are completely cool, spread a teaspoon of fruit jam on the bottom of half of the cookies and top them with the other half to create sandwich cookies.
