Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 medium red bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 medium onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons fajita seasoning
Instructions
- 1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- 2. While the oil is heating, slice the chicken breasts into thin strips.
- 3. Add the chicken strips to the skillet and sprinkle with fajita seasoning, cooking for about 5-7 minutes until the chicken is cooked through.
- 4. Remove the chicken from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil, followed by the sliced onions and bell peppers.
- 5. Sauté the vegetables for about 5-7 minutes until they are tender and slightly caramelized, then return the chicken to the skillet and mix well.
