Japanese-Style Omurice with Spicy Tomato-Potato Sauce
A savory Japanese omelet rice, filled with cheesy tomato fried rice and topped with a medium-spiced tomato-potato sauce.

Ingredients
- 1.5 cups Rice (uncooked)
- 2 cups Tomatoes (fresh, diced)
- 1 cup Cheese (shredded, mild or mozzarella)
- 8 large Eggs
- 2 medium Potatoes (peeled and diced small)
- 0.5 cup Onion (optional, finely chopped)
- 2 tablespoons Soy sauce
- 3 tablespoons Ketchup
- 1.5 tablespoons Sriracha or chili sauce
- 0.5 teaspoon Salt
- 0.5 teaspoon Black pepper
- 2 tablespoons Vegetable oil
- 0.5 cup Water
Instructions
- 1. Cook rice according to package directions. Let cool slightly.
- 2. Heat 1 tablespoon oil in skillet over medium. Add diced potatoes and cook 5-7 min until golden.
- 3. Add onion (if using) and half the tomatoes to skillet. Sauté 2-3 min until softened.
- 4. Stir in cooked rice, 2 tablespoons ketchup, 1 tablespoon soy sauce, half the cheese, salt, and pepper. Mix well and cook 2 min.
- 5. Transfer rice mixture to a bowl. Wipe skillet clean.
- 6. In a bowl, beat 2 eggs with a pinch of salt. Heat a little oil in skillet, pour in eggs, swirl to coat.
- 7. When eggs are just set, spoon 1/4 of rice mixture in center. Sprinkle with cheese. Fold omelet over filling, slide onto plate.
- 8. Repeat with remaining eggs, rice, and cheese to make 4 omurice.
- 9. For sauce: In small pan, combine remaining tomatoes, 1 tablespoon ketchup, 0.5 tablespoon sriracha, 1 tablespoon soy sauce, and 0.5 cup water. Simmer 3 min.
- 10. Spoon sauce over omurice. Serve hot.
