- 2 cups cauliflower florets
- 2 cups potatoes, diced
- 1 tablespoon oil (vegetable or ghee)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 cup fresh cilantro, chopped
- 1 cup water

Instructions
- 1. Heat the oil in a large pan over medium heat. Add the cumin seeds and sauté for about 30 seconds until they start to crackle.
- 2. Add the chopped onions to the pan and cook, stirring frequently, until they turn golden brown, about 5-7 minutes.
- 3. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
- 4. Add the diced potatoes and cauliflower florets to the pan. Sprinkle in the turmeric, coriander powder, and salt, stirring well to coat the vegetables.
- 5. Pour in the water, cover the pan, and let it simmer for about 15 minutes or until the potatoes and cauliflower are tender. Uncover, add garam masala, and cook for an additional 2 minutes. Garnish with fresh cilantro before serving.
