Indian Spiced Masala Eggs with Onion, Tomato & Oregano

Ingredients
- 8 pieces large eggs
- 2 medium yellow onion
- 3 medium tomato
- 2 pieces fresh green chili
- 3 pieces garlic cloves
- 1 inch piece ginger
- 2 tablespoons vegetable oil
- 0.5 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 0.5 teaspoon red chili powder
- 1 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoons fresh cilantro (optional)
Instructions
- 1. Finely chop onions, tomatoes, green chilies, garlic, and ginger.
- 2. Heat oil in a large skillet over medium heat. Add onions and sauté until golden, about 6 minutes.
- 3. Add garlic, ginger, and green chilies. Cook for 2 minutes until fragrant.
- 4. Stir in turmeric, cumin, coriander, oregano, and chili powder. Cook for 1 minute.
- 5. Add chopped tomatoes and salt. Cook until tomatoes are soft and oil begins to separate, about 7 minutes.
- 6. Crack eggs directly into the pan. Gently stir to scramble, mixing with the masala. Cook until eggs are just set, 4–5 minutes.
- 7. Season with black pepper. Garnish with fresh cilantro if desired. Serve hot.
