Spicy Bison Stir-Fry with Rice, Bell Peppers, and Broccoli

Ingredients
- 500 grams ground bison
- 1.5 cups (uncooked) white or brown rice
- 2 medium (any color) bell pepper
- 3 cups broccoli florets
- 1 small yellow onion
- 3 cloves garlic
- 4 tablespoons soy sauce
- 2 tablespoons sriracha or chili-garlic sauce
- 2 tablespoons sesame oil (or vegetable oil)
- 0.5 teaspoon black pepper
- 0.5 teaspoon salt
- 0.25 cup water
Instructions
- 1. Cook rice according to package instructions. Set aside and keep warm.
- 2. Dice onion, mince garlic, cut bell peppers into strips, and chop broccoli into bite-size florets.
- 3. Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add ground bison and cook, breaking up, until browned (5-6 min). Remove and set aside.
- 4. Add remaining oil to the pan. Sauté onion and garlic for 2 minutes. Add bell pepper and broccoli, stir-fry 3-4 minutes until crisp-tender.
- 5. Return bison to pan. Add soy sauce, sriracha, water, salt, and black pepper. Stir-fry 2-3 minutes until everything is coated and heated through.
- 6. Serve stir-fry over rice. Garnish with extra chili sauce if desired.
