Batch Cooked Quinoa Multiple Ways
This versatile quinoa recipe allows you to prepare a large batch that can be transformed into different meals throughout the week. Nutrient-dense and easily customizable, it’s perfect for meal prep and keeps well in the fridge for several days.

Ingredients
- 2 cups quinoa
- 4 cups water or vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 cup chopped vegetables (bell peppers, zucchini)
- 1 cup cooked beans (black beans or chickpeas)
Instructions
- 1. Rinse the quinoa under cold water to remove any bitterness.
- 2. In a large pot, combine the rinsed quinoa, water or vegetable broth, olive oil, and salt. Bring to a boil.
- 3. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- 4. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
- 5. Divide the cooked quinoa into meal prep containers and mix in different combinations of chopped vegetables and cooked beans for variety throughout the week.
