Paleo Shrimp Tacos in Lettuce Cups

Ingredients
- 1 pound raw shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 clove garlic, minced
- 8 leaves large romaine or butter lettuce
- 1 cup diced tomatoes
- 1 avocado sliced
- 1/4 cup cilantro, chopped
- 1 lime juiced
Instructions
- 1. In a medium bowl, toss the shrimp with olive oil, smoked paprika, ground cumin, and minced garlic until well coated.
- 2. Heat a large skillet over medium heat and add the seasoned shrimp. Cook for about 3-4 minutes per side or until the shrimp are pink and opaque.
- 3. While the shrimp are cooking, prepare the lettuce cups by rinsing and drying the leaves. Arrange them on a serving platter.
- 4. Once the shrimp are cooked, remove them from the skillet and let them cool slightly. Then, squeeze fresh lime juice over the shrimp.
- 5. Assemble the tacos by placing a few shrimp in each lettuce cup, topping with diced tomatoes, avocado slices, and chopped cilantro. Serve immediately.
