Ingredients
- 1 pound boneless, skinless chicken breast
- 1 cup quinoa
- 2 cups low-sodium chicken broth
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- 1 cup chopped fresh cilantro
- 2 cups mixed greens
Instructions
- 1. In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and liquid is absorbed.
- 2. While the quinoa cooks, heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with taco seasoning and add them to the skillet.
- 3. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from skillet and let it rest for a few minutes before slicing.
- 4. In the same skillet, add the black beans, corn, and diced tomatoes. Cook for about 3-4 minutes until heated through.
- 5. To assemble the burrito bowls, layer a base of mixed greens, followed by quinoa, sliced chicken, and the bean-corn-tomato mixture. Top with chopped cilantro and serve.
