Refried Black Beans (Medium Spice)

Ingredients
- 2 15-oz cans canned black beans (drained and rinsed)
- 2 tablespoons olive oil
- 0.5 medium yellow onion, finely chopped
- 2 cloves garlic cloves, minced
- 0.5 medium jalapeño, seeded and finely chopped
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon chili powder
- 1 tablespoon lime juice
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup water or vegetable broth
Instructions
- 1. Heat olive oil in a large skillet over medium heat. Add onion and jalapeño; sauté until softened, about 5 minutes.
- 2. Add garlic, cumin, smoked paprika, and chili powder. Cook, stirring, until fragrant, about 1 minute.
- 3. Add black beans and water (or broth). Stir, bring to a simmer, and cook for 5 minutes.
- 4. Using a potato masher or fork, mash beans to desired consistency. Simmer 5–7 minutes, stirring, until thickened.
- 5. Stir in lime juice, salt, and pepper. Taste and adjust seasoning if needed. Serve warm.
